No matter how many times people are warned about the consequences of human action including population growth, it doesn't seem like anyone is listening. Maybe people just don't care or don't believe that we're killing our planet. I do what I can: compost what I can for my garden, recycle and repurpose whatever I can, buy locally to support local farmers and not waste fuel or risk pollution from things that have to be transported long distance and I conserve gas but it seems so futile.
I enjoyed reading your article about the rain forest and, as always your recipes. Loved the Rain Forest trail mix. I'm still waiting on that cook book.
It's always good to read your posts.

Acai Berry Cupcakes

1/2 cup butter
1 cup sugar
2 eggs
1 1/2 cups cake flour
1 tsp baking powder
1/4 cup skim milk
1 1/2 cups acai berry pulp

Preheat oven to 350 degrees. Line muffin tin with paper cupcake liners. Add butter and sugar in mixing bowl, with hand or stationary mixer, mix on medium-high speed until creamed together and fluffy. Add eggs and beat until incorporated well. In a sifter or sieve, sift the cake flour and baking powder together into a separate bowl. With mixer running, slowly add the flour-baking powder mix to the creamed mixture in bowl. Slowly pour in milk, continuing to let mixer run until everything is combined; turn off mixer. With a rubber spatula or spoon, fold the acai berry pulp into the mixture, until combined well. Spoon mixture into the muffin liners, filling each muffin cup about 2/3 full. Bake in preheated oven for 20 to 25 minutes or until just starting to get golden around the edges and toothpick comes out dry when inserted into center.

Hi, Annie! What a great place to let your imagination take flight--endless opportunities for adventure!

"Taste of the Tropics" Pie

1 (14 oz) sweetened condensed milk
1/4 c. lemon juice
1 (8 oz.) carton nondairy whipped topping
1/2 c. flaked coconut
1 can crushed pineapple (drained)***
1 c. chopped macadamia nuts
1 (8 oz.) jar maraschino cherries (drained)***
3 or 4 bananas, sliced
2 graham cracker crusts (deep dish)

Beat sweetened condensed milk and lemon juice. Blend in whipped topping. Add coconut, cherries, pineapple and nuts. Slice bananas and line bottom of crusts. Layer pie filling mixture and bananas, ending with pie filling. Chill in refrigerator until set.

***The juice from the pineapple and cherries is too good to waste. Use it to flavor beverages, desserts, and etc. If not to be used right away, freeze juice in small airtight containers.

Passion Fruit Mousse

8 passion fruits
1 tablespoon white sugar
1 (14 ounce) can sweetened condensed milk
2 cups cream
Break passion fruits in half, and empty contents into a bowl. Use a little water to help rinse the juice out of the skins. Mix with hands to soften pulp. Strain through a sieve or cheesecloth. Stir in sugar and sweetened condensed milk. In a chilled bowl, beat cream until stiff peaks form. Fold 1/3 of the cream into the passion fruit mixture, then quickly fold in remaining cream until no streaks remain. Refrigerate for 1 hour.

Strawberry Banana Skin Exfoliator

(strawberries exfoliate and the banana moisturizes)

4 medium strawberries

1 banana

2 tablespoons extra virgin olive oil

½ cup raw sugar (raw sugar is best but you can substitute processed sugar)

First chop your strawberries into fourths and cut your banana into small pieces. Combine the two into a medium-large sized bowl and mash well so that there are no clumps. Add to the mixture the olive oil and stir until it is completely mixed in. After you've got a mixture that is smooth and consistent, add your raw sugar. Mix again until the sugar is evenly dispersed. Apply this mixture to your body in the shower. Pay careful attention to places where dead skin builds up (like your elbows, knees, heels and ankles). Massage into your skin in a circular motion for 3-5 minutes. Let the mixture set for 3-5 additional minutes and rinse away with warm water. Gently pat dry.

Hello, my lovelies! I believe in pampering yourself, even if it's just in little doses, here and there! It's very, very important to take care of yourself, and allow yourself time to take some deep cleansing breaths. Here's a recipe to enjoy (eat it if you must) for beautiful, glowing skin : )

Papaya & Pineapple Beauty Mask

1/2 cup fresh pineapple chunks
1 ripe papaya
1 tbsp honey

Add all ingredients to your blender or mix by hand until a smooth consistency is achieved. Apply to your face for 5-10 minutes. Relax, refresh, revive yourself while this mask is doing its job! Rinse with cool water. Apply your favorite moisturizer. Store leftover mixture in a covered container in refrigerator for up to 2 days.
